Vegetarian Lahana Dolması (Stuffed Cabbage Rolls with Dill)

Serves: 6–8 | Prep Time: 30 min | Cook Time: 1 hour

Ingredients:

For the cabbage:
• 2 small Waitrose pointed cabbages
• Salted boiling water (for blanching)

For the filling:
• 1½ cups short-grain rice (washed and drained)
• 1 large onion (finely chopped)
• 1 tablespoon tomato paste
• 1 tablespoon pepper paste (optional)
• 1/3 cup olive oil
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1 teaspoon paprika
• 1–2 teaspoons pul biber (optional)
• A handful of fresh dill (chopped)
• Optional: 1 grated tomato or 1 tbsp pomegranate molasses for a richer taste

For the sauce:
• 1 tablespoon tomato paste
• 2 tablespoons olive oil
• 2 cups hot water (or enough to just cover)
• Juice of ½ lemon
• Salt to taste

Instructions:
1. Prepare the cabbage:
• Slice both pointed cabbages in half lengthwise.
• Gently remove the leaves and blanch in salted boiling water for 2–3 minutes until soft.
• Drain, let cool, and trim thick veins for easier rolling.
2. Make the filling:
• In a large bowl, combine rice, chopped onion, tomato/pepper paste, olive oil, lemon juice, dill, and spices.
• Mix well until everything is fully coated and fragrant.
3. Roll the dolmas:
• Cut large cabbage leaves into palm-sized sections.
• Place a spoonful of filling onto each leaf, fold in the sides, and roll tightly.
• You should have around 25 small dolmas.
4. Layer the pot:
• Line the bottom of a wide pot with leftover cabbage pieces.
• Arrange the dolmas tightly in layers, seam side down.
5. Make the sauce:
• In a bowl, mix tomato paste, olive oil, lemon juice, hot water, and a pinch of salt.
• Pour the sauce over the dolmas until just covered.
6. Cook:
• Place a heatproof plate on top of the rolls to hold them down.
• Cover the pot and simmer on low heat for about 50–60 minutes, until the rice is fully cooked.
7. Serve:
• Let rest for 15 minutes. Serve warm or at room temp with lemon wedges or yogurt.
