I just did an exam which took up all my spare time, so decided to get back into it with some healthy prep!
Quinoa – just boiled with some stock, kept it simple
Lemon thyme chicken – chicken breasts, lemon juice, thyme, salt and pepper. Marinaded for about an hour while prepping the veggies then roasted.
Sweet potato and courgette – diced, tossed with a little oil and garlic and baked
Roasted Brocolli – tossed in oil, seasoned and baked
I definitely need some healthy food!

Super clean, nice way to reset after the big tests. I’ve only just started toying with quinoa, do you use just as much stock as you’d normally use water?
