For those unfamiliar, CSA stands for Community Supported Agriculture. You pay a subscription to a local grower and each week—ours runs from June through November—you get a box of amazing seasonal, organic produce (or fruits, meats, etc.) It’s a great way to support local farms and the produce is top notch. This week was our first box and it was heavy on the greens—romaine, arugula, cilantro, lacinato and red kale, red and white radishes. I hadn’t subscribed in a few years but now that I’m following the MD it seemed like a great opportunity to re-up since veg is the main focus of the diet.

I made quick pickled radishes to eat with almost everything since I’m kind of a pickle addict.

Radish greens pesto. I use small dollops of pesto with lots of different veg and grains. I also made basil pesto and parsley pesto because my herbs were taking over the planter and I had to trim everything back to keep it going. I’ll freeze most of these since I have a LOT of pesto now. 😵‍💫

Salt and vinegar kale chips for snacking (curly kale works best for chips but these varieties were fine).
