Used a masterbuilt smoking cabinet with cherry wood for the meats, except kofta. I know they don’t appear on the Texas menus but had them from last night.

Burbon wings, pulled pork, chicken, kofta, ribs. Weather in Ireland is amazing right now.

    Looks good, man. What kind of wood did you use? I’d suggest adding some czech style sausage and some boudin as well if you are going for accuracy. Also, we do have koftas in texas, just usually not at bbq places.

    You are generally correct that we don’t have kafta at bbq places in TX, we usually serve that at Mediterranean restaurants. We don’t really have kabob shops. There is an interesting place called K G bbq that does an Egyptian bbq fusion (kgbbq.com). It’s in Austin and it’s really good and their menu is really inspiring.

    Where did you pull your recipes from? Have you had US bbq?
