It’s what keeps me going. Nice to encounter a challenge to your perceived greatness (in a home kitchen, nonetheless) On the other hand, in Germany, I rarely encounter restaurants that make their own bread, so this rarely happens outside of traveling

If you do something for a living every single day, I expect it to be reliable, consistent and formulated.
My bread has its ups and downs, someday my technique isnt consistent.
But I expect a bakery to have consistency and that’s what I value in them a lot, just a reliable way to get bread without frustrations.

I used to make bread every morning for a Michelin star restaurant and it was always better at work than at home. Even with the same sourdough starter, same flour, same all. Always better lol

Normally my bread is better but I did go to a one star Michelin restaurant that served sourdough, and it was probably the best bread I’ve had. Granted it should be from a critically accredited restaurant

No. They are professional doing it every day. I do it every week or two. They are dialed in on a consistent process with consistent ingredients. I use whatever flour I have around and eyeball the process.
For example I don’t measure the temperature of the ingredients nor the finished dough and the proofing is eyeballs. I don’t have a steam injection oven, nor a temperature and humidity controlled proofing chamber
So if I come close to pro grade I feel good about it

Where I live it’s hard to get truly well made bread, so it’s pretty rare for that to happen. I wouldn’t be mad though. I’d be pleasantly surprised. Admittedly, I haven’t tried the $10 loaves from the farmers markets, because well… They are $10.

Not at all – mine is better than the mass-produced commercial loaves available at the big box grocery store, and that’s plenty good enough for me, for now 😊
(My standards are pretty low, but the bar’s slowly raising).

It’s usually the opposite for me. Anytime I get bread anywhere else, I’m pretty disappointed. Not saying I’m the best by any means. I’ve still got a lot to learn.

I got a focaccia at a restaurant before, the whole thing was like a cracker, not chewy at all, I was legit confused. Just went, ye I can make it way better at home with almost no effort. I legit dont know how they serve that and call it a focaccia. I’m very critical of Bread I get in restaurants or bakeries. Too many places sell subpar shit for profit and have 0 standards or willingness to improve their product.
