This is a straightforward avocado tofu toast recipe. It's relatively easy to prepare.
Serves 2 (I think)
Ingredients:
* 1 ripe avocado
* 2-4 grape tomatoes
* 2 slices sourdough bread
* 1 block super firm tofu (10 oz)
* 1/4 lemon
* 1/2 tsp dried oregano
* a sprinkling of garlic powder (was out of fresh garlic)
* salt and pepper to taste
* Nutritional yeast
* cooking oil (I only have avocado right now, so i used that)
Instructions:
1. Prepare Tofu:
* Press the tofu to remove excess water. I used a cheese cloth because I stopped buying paper towels. I placed something heavy on top for about 10 minutes, which I realize is likely too short…
* Slice the pressed tofu into 1/2-inch slabs.
* Heat skillet over medium-high heat. Add enough oil to lightly coat the bottom of the pan (about 1 tablespoon)
* Once the oil shimmers, place tofu slabs in a single layer, ensuring not to overcrowd the pan. I contiuously moved them around with my spatula for the first couple minutes, otherwise they stick to my pan.
* Sear for 6-8 minutes per side, or until deeply golden brown and crisp. Adjust heat as needed to prevent burning.
* Remove from pan and season lightly with salt.
Toast your Bread
Prepare Avocado Spread
- While toast is browning, halve and pit the avocado. Scoop into bowl.
- Add lemon juice, oregano, garlic powder, salt, and black pepper.
- Mash with a fork
Assemble Toast:
- Spread mashed avocado evenly on toasted bread.
- Arrange crisped tofu slabs on top of the avocado.
- Slice grape tomatoes and place them on top.
- Sprinkle with nutritional yeast.

On the topic of tofu on bread, as a reminder, it’s possible with a cheese slicer to cut 1-2 mm slices out of tofu, just like cutting cheese. And while their great as they are or with a dash of spices on top, those slices are great for frying as well and getting a bit of bacon-like thing going on (especially with smoked tofu!).
