Wife wanted to run the offset after helping me a lot. She did awesome but she was upset how they turned out. She did 1 no wrap, 1 wrapped. She made her own brown sugar. She made perfect competition style ribs.

Problem is she likes fall off the bone (soup on a bone). She kept temp between 225f-280f spikes. I think she nailed it but after 7 hours of her doing it she almost cried because of tenderness.

Let her have it or words of praise from you all?

    Those look fire. I don’t like fall off the bone so I’d fuck those up. If she wants fall off the bone they should just stay wrapped longer than you’d normally do by a lot.

    7 hours sounds too long. They may have gone past the point she likes if there was no moisture in the wrap

  9. Fall off the bone needs to be wrapped longer thats all they look great and definitely she’s not watching competitions because fall off the bone is a no no but it’s the taste that’s most important

    What was the initial weight per rack on the packaging? Usually the old adage of 3-2-1 works for even the heaviest rib racks, but I have needed up to 8 hours for ribs before when they were particularly vertically-meaty.

    Fall off the bone is my type of rib as well. Sometimes I do want competition style though. Nothing wrong with either one honestly.

    Gotta wrap them an extra 30-60 minutes if you want fall off the bone. I accidentally got to that point quite a few times.
