Recipe:
Buncha Ipswich/steamers
Purged in cold salt water for like 45min, strained, then dropped in boiling water for 20sec. Strain, then straight into ice water. Open and separate, remove sheath. Soak in buttermilk.
Dredge:
– 1:1 all-purpose flour to cornflour mix (not corn starch) – salt, fresh ground pepper, and cayenne to liking
Toss in dredge, shake of excess, fry in hot peanut oil til browned
