This is my first real attempt at gardening. I’ve done containers before, but only a couple at a time. This year, I might’ve gone a little overboard, but that’s OK because I’ll share. This was the plant I was most excited to see grow because it was basically on death’s door when I saw it at a local nursery.

    Me too for the eating part. They may just be a new favorite to grow for me. I’ve tried a couple recipes and I really love keeping it simple with them…. grilled or shallow fried with some lemon and olive oil drizzled on top and sprinkled with some salt. I hope they hurry up and grow because I can’t wait to eat them. If you have any recipes or a particular way you like to eat them, please feel free to share.

    Awesome! I grew my first eggplants last year and now I’m growing twice as much this year lol. Don’t be surprised if the first few flowers don’t pollinate. Mine usually don’t. But they will be kicking out more eggplant than you can eat soon

    Eggplants have some of the most beautiful flowers, when it comes to edible plants. Hope you have a great harvest!
