Finally decided to try grilling fish so I got us two big (newborn son for scale) seabreams and went for it. Seasoned about 2 hours before grilling: lime juice and honey, lime, pink pepper, sesame, lemon-tyme.

It was great but I learnt the hard way that fish should stay higher on the fire compared to meat :').

  4. I’m somewhat new to grilling. Can you explain what you mean by higher on the fire? Do you mean placing the grates higher above the fire but still in direct cooking? Or do you mean totally indirect cooking for longer?
