I think if you have it and it starts to go bad, carmelize all of it and keep it on standby in the freezer for other dishes. Great for curry and soups, or a baked potato!

if I have left over onion like that, I tend to try to incorporate it into what I’m making, if the onion is small enough, I put the entire onion in a dish even if the recipe only calls for like idk 50g of onion
