




I thought I'd try a little Worcestershire sauce as a binder for a garlic-heavy SPG and it was delicious.
I used my vortex upside down so there was a sear zone for two steaks at the same time and seared them for a total of 2 minutes. 1 minute per side – 30 seconds, turn 90° then another 30 seconds to get some nice grill marks.
I then shifted them to come to temperature indirectly, threw a few small oak chips onto the coals and pulled them at 57c/134f to account for carryover cooking to get an appreciable medium.
I rested them on SPG seasoned butter for 10 minutes then served.
The steak was juicy and tender, the melted butter was an excellent dipping sauce for a flatbread.

Looks good and sounds good. I’m getting. Vortex this weekend. Heard so many good things about them
Vortex didn’t help with the “sear”. More heat, not gadgets, allow you to get a solid sear.
Did you cut this with a plastic knife?
