So I had a whole chicken I bought from Wegmans and just so happened to be watching a video that same day on how to completely debone a chicken.

I deboned, brined, and smoked at 300° then cranked up to 400° once I hit 130°

Seriously the best chicken I've made so far and so easy to portion out.

I'm saving the other half for sandwiches this weekend.

  1. Just the idea of that cross section should be enough for everyone to give this a shot. Very cool

one of my favorite ways to “brine” a chicken is in beer with a lot of herbs and seasonings.

  3. That’s a hell of a centerpiece. I already loved smoked chicken for how cheap and easy it is to do, I think I’ll be giving this one a try soon.

    Great job.

My grandmother used to make all her chickens this way. I was out to dinner at a bbq place, my dad orderd a family meal and i had no idea chicken had bones!

This is cool want to try but how much nutritional value do you lose not cooking on bone?

If I was served that the only way there would be another half is if I made two.

    Looks spectacular

Is it wrong that whenever I do something like this I imagine aliens coming to earth and doing it to humans?

That looks insane. I am inspired. Well done.

I sold meat in grocery stores for 20 years. way back at my first job a customer wanted a whole chicken deboned, they had seen it on FOOD network.

I worked with guys with 10-40 years experience. no one really knew how to do this, and the customer threw a fit and so this post triggers me 😹

You should have videoed your process. I’m intrigued…
