Bring the water in the pot to a boil. Add 2 bay leaves, 1 tablespoon of black peppercorns, 1 tablespoon of salt, 2 garlic cloves, and the juice of half a lemon. Place two chicken breasts in the pot. Once the water comes to a boil, cover with a lid and turn off the heat. Let it sit, covered, for 30 minutes. Warm a frying pan over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Slice 450 g (16 oz) of mushrooms. In this video, I’m sharing two delicious chicken and mushroom recipes! If you love the first one, you’re definitely going to love the second one! 😋. sauté for about 4 minutes until nicely caramelized, stirring occasionally. 2 garlic cloves. season with ½ teaspoon of salt and pepper. Mix well and cook for about half a minute. Deglaze with 80 ml (⅓ cup) of white wine, and simmer for 1 minute until the wine has evaporated. Add 160 ml (⅔ cup) of chicken stock. 120 ml (½ cup) of sour cream. 50 g (½ cup) of grated parmesan. Bring the sauce to a simmer, reduce the heat to low and cook for another minute. fresh parsley. If you like, add some chopped fresh parsley. Open the lid and take out the chicken breasts. They’re perfectly poached and ready to use. Get ready for the second most delicious recipe 😋💯. mm…delicious😋. Let’s jump into the second recipe! 😋. 6 chicken drumsticks and 4 chicken thighs. 1 1/2 tsp Salt. 1 tsp Black pepper. 1/2 tsp Garlic powder. drizzle with Olive oil. rub the spices into the chicken. Olive oil helps seasonings stick to the chicken, retain its natural juices, also the fat in olive oil carries fat-soluble flavors from spices deeper into the meat. Melt 3 tbsp butter over medium heat. Fry the chicken thighs, skin side down, until golden brown, about 4 minutes. Flip and cook the other side for another 3 minutes. set the chicken thighs aside. Fry the drumsticks for about 7 minutes on all sides. Set the chicken drumsticks aside. 1 Onion. add onion to the pan and fry over medium heat for 1 minute. 340g / 12oz Button mushrooms. cut the mushrooms in half. add mushrooms to the pan. add 2 small fresh bay leafs or dried. Fresh Thyme or 1/2 tsp dried thyme. Cook for 7 minutes. thinly slice or mince 2 garlic cloves. cook for another minute. add 3 tbsp flour and cook for 1 minute. Add 1/2 cup / 120ml Chardonnay or any dry white wine. Add 3 cups/ 700ml Chicken stock. Return chicken back into the pan. Cover and simmer for 12 minutes. Meanwhile cut some potatoes. We will prepare the best side dish 😋. Add 1 tbsp salt and cook until tender, about 18 minutes. Remove the lid and continue to simmer for another 25 minutes. Add butter and milk to the potatoes and mash well. Add 1/3 cup / 80 ml Heavy cream and stir. Add spices: 1/4 tsp Salt, 1/4 tsp Black pepper and 1/4 tsp Nutmeg. Some fresh thyme or parsley (optional). Serve with mashed potatoes, rice, pasta or whatever you like 😋. Thanks for watching, liking and subscribing 🥰. mm…delicious 😋.

Greetings from Scotland! Great ingredients, perfect recipe's! One question, do you always peel your potato's before cooking/frying? I have never peeled my potato's and prefer them with the skin on, just wash if necessary. I just think it adds more flavour. Each to his own though. 😊

I would be tempted to sauté the chicken just a little bit in butter before adding it to the delicious mushroom sauce !
Hint: with the potatoes melt the butter first and then put in the milk
