today we are making caprese bruschetta or bruschetta with mozzarella cheese it is such a yummy appetizer and so simple just start by taking some slices of bread or baguette you can slice them yourselves or you can buy the pre-sliced ones right from the grocery store in the bakery department and you’re going to put olive oil on both sides a generous gug on either side and then you’re gonna pop the olive oil bread on into the oven and let it bake and crisp up you could also grill it on the stove top meanwhile you’re gonna make your bruschetta topping you’re going to slice a tomato preferably aroma but I had an heirloom tomato from the farmers market i’m just cutting it into slices and then I am dicing it it really helps here if you use a serrated knife also I’ve got my cutting board on a piece of paper towel to keep it from slipping around because the tomato does have a lot of moisture in it and it will sort of like leak its juice everywhere after that’s all done you’re going to throw the tomato into a bowl and set the bowl aside while you chop up your mozzarella you can save yourself this step if you buy the mozzarella pearls but we had a log of sliced mozzarella from Costco so that’s what I’m using and I am just dicing it into more or less equal sizes as the pieces of tomato i probably could have gone even smaller then it’s going to go right into the bowl with that chopped tomato last part some basil i am making a shifod so I’m rolling my basil leaves up kind of tight and then I’m just going to cut it into ribbons like you see me doing here once I’m all done with that into the bowl with the tomatoes and the mozzarella and now that everybody’s in the pool we’re going to salt and pepper everything pretty liberally this is the only time we’re seasoning things so you want to be generous more olive oil lots of olive oil and a bit of balsamic glaze you could also use balsamic vinegar if that’s what you have give it a good toss see how it looks if you need to you can add some more olive oil and some more balsamic when you’ve got your salad dressed to your liking it’s time to take the bread out of the oven take a piece of garlic and cut the ends off so that you have that flat piece and then you’re going to rub the garlic all over each slice of warm bread before you top it with a spoonful or two of your tomato mozzarella basil situation drizzle it with more balsamic if you want or enjoy it as is the full recipe seasonprinkles.com like follow and subscribe for
