1.5# top sirloin. Can I cut 3/4 steaks from this just slicing to bottom? I believe that’s against the grain..

    You can and lots of people do.

    But you can also remove the cap (on the right hand part of the steak) and have 2 different kinds of steak.

    You’ll have the coulitte (cap) which is generally softer, and the sirloin underneath. I just wish that they had left some of the fat cap on, because that’s Picanha.

    I always feel bad selling this specific cut off the butt. There’s a good baseball/sirloin fillet on it, but the rest has so much sinew it’s almost inedible.
