    If I may ask, what aspects of your job are making you unhappy? I’m sure many of us romanticize a career in baking. I hear it’s a grind.

    People don’t know how good they are almost straight out of the oven 😀

    When i was still a pastry chef, I would bring out all the speed racks that had full sheets of miniature: fruit tarts, craqueline cream puffs, cannoli, tuxedo and bride gown strawberries, lemon bars, and tons more. And I would lay some trays out along all the benches, and photograph it.

    It looked very much like this, but with mignardises.

    I do miss taking those photographs, and it felt like such an achievement making 3,000 little custom pieces.

    I hear that. Supermarket bakeries don’t seem to give you much room for artistry. It’s formula, process, and schedule. How good are your products? In general, I find supermarket bread to lack density and chew. I’m not casting aspersions in your baking skills. It just seems that lighter loaves are more profitable.

    Do you produce laminated breads, as well?
