Our improvised version of a brilliant steak dinner in Bilbao, sous vide picanha sliced into strips then seared on the fly at the table on a $40 electric grill! Superb!

I like this method and have used it with an air fryer that is constantly running at 400F on the counter nearby. Little to no smoke due to the ‘contained’ state of the air fryer. Works with any meat. Usually if I plan on doing this, I will cook it more rare than our preferred medium rare final stage that we like for the finished “done-ness”.
We ate at a restaurant some years ago that would bring a slab of 600F+ preheated basalt and set it on the table along with raw beef to cook yourself throughout the meal. We would slice of small pieces and sear as needed rather then cooking the entire steak. They will bring you another stone if it gets too cool. It was quite nice other than lots of smoke from the dozens of sizzling rocks in the joint!
