Night 3!

Wings were dry brine over night with baking powder and sriracha salt. Smoked with Apple!!!

Sauce is Gochujang!!!! Made with Gochujang, soy, honey, lime, fish sauce, Angry Grandma Chili Crisp!, and a touch of hoisin.

Tomorrow we will close it all with night 4!

    I recently bought some Torchbearer Thai xxx hot sauce. It’s too sweet to use on its own imho, but it has an AMAZING Thai curry flavor. So I mixed some with a little melted butter and a teeny tiny bit of soy sauce to make a wing sauce. Holy moly it was good.

  8. I’ve gotta try this. I got some gochujang for another dish I made recently (bulgogi, if anyone cares) and have been thinking other ways to use it. I think you just gave me my answer.
