Breakfast – 3 packets of oatmeal + almond milk latte (forgot to photograph)

Lunch – Instant miso soup + brown rice + turkey lunch meat

Snack – Pineapple fruit bar

Dinner – Beef & eggs + brown rice + instant miso soup

As I've mentioned before I am disabled, so I know a lot of the instant stuff could be better made from scratch (I get comments on that a lot). I do cook from scratch when I'm able to, but I'm not always able to.

Also I get a large portion of my food from the food pantry or discount stores, so what I eat is often more dependent on what’s available for cheap/free than what I actually want/what’s the lowest calorie option. If you’re also on a budget, get creative! It’s more challenging but very possible to eat well on low income and/or with physical restrictions 💖

If you have less restrictions, substituting turkey or chicken for the beef would be a great way to cut down on the fat and calories! Same with substituting the rice for cauliflower rice, which I’ve heard is a great option but never tried myself (I’d have the miso soup on a separate bowl if you use cauliflower though).
