Leave them on the vine until the stem turns brown. With butternut I usually just left them in garden until the fall unless something is eating them.

The stem: It should be slightly browning when it’s ripe. Once it’s reached this stage, I’d pick and enjoy! Right now, yours *looks* ready, but it still has a few weeks to go.
It depends on when you plan to eat it: today-pick it, next week – pick it next week. If you want to save it to store for the fall/winter, wait until the stem corks.
