If you are feeling super lazy, you can buy bags of frozen boneless thighs and let them thaw in a ziplock bag with marinade in your refrigerator overnight.

I like to do a dry brine in salt, pepper, garlic, and paprika for about 4 to 6 hours. Then I will toss them in bachan bbq sauce for about an hour.
Then indirectly smoke (I don’t actually pay attention to what my air temp is) them with the slow n sear until they temp to around 175. Then get coals hot and add a little more sauce and sear them.
Pairs up really nice with some yellow rice.

I love to marinade with the Lawry’s mesquite marinade then pat them down and add some rub then cook them up.
Well, loved. Can’t find the mesquite anywhere around here now.
