I was eating this beef jerky strip I had, it was in the dark, so I didn't notice the weird white stuff on it. I know it's not mold… what is it?

    Looks like congealed fat. Did it happen to get warm and then transferred to the fridge or something?

  3. Reconstituted beef jerky often incorporates fat into the mix. If that jerky gets hot, the fat can render out, just like it would with a well marbled steak. That fat can then congeal again at room temperature.

    Seems likely that’s what you’re looking at.

    It’s fat, though I don’t think I’ve ever seen that on packaged jerky, just stuff I’ve made myself.

    Congealed fat. On the chopped, pressed, and formed meat snacks they use tons of fat. If it warms up or sits too long, the fat solidifies and looks like this. I’ve gotten entire bags of these strips where everything looks like this. Won’t hurt you, but won’t affect the taste much to just wipe it off with a paper towel.
