Hello everyone ♥️♥️ Spying on this monkey cat this morning I bought a new ingredient tried to open it once tried it twice -giving up Quick sniff test- it passed This is an Italian flatbread I’ve seen that originally it’s stuffed with arugula, cheese and prosciutto But since I don’t have any of these, I’ll create my own filling I’ve grilled them on both sides Why are you running away! please stand still for a moment That’s polite, thank you Melting some butter in the pan and dropping the eggs in It’s tricky to make them scrambled, on low heat, I keep stirring them We like our eggs fully cooked but maybe I overcooked them here haha Washing some chives in the background Chives are very hard to come by where I live and still I’m not so sure what to use them for A morning essential: cottage cheese yayy Topped with turkey slices and the prepared eggs Using chives and feeling like working in a cafe &and an extra garlic shiracha that I’m obsessed with recently My favorite (have you noticed) cherries are back in season along some blueberries since cherries are expensive right now The drink for the day is strawberry-flavored kefir milk This flatbread feels very different from the ones I usually have I can’t wait to dig in 🤤 Alerting mr P for the toothpick 🚨 The wrap is full to the brim and my eyes are satisfied This wrap is different both in taste and texture I think it resembles a very thin pizza-like dough rolled very thinly Of course, since it is Italian, it couldn’t be bad haha🤤 It’s filled to the brim even in the last bite The filling was very suitable you keep making yummy things I feel so happy and full Drinking some kefir to quench my thirst I love having some fruit after my meal during winter, I rarely eat fruits, but during summer, I love them cherries, nectarines, strawberries oh so yum It’s so much easier in summer to stay healthy haha You have a kefir mustache This always happens to me somehow I cut so many chives and I think the best way to preserve them is in the freezer This way, I’ll have these chives for a long time I’ll do this quickly as I don’t want them to whittle I’ll spread them on the container lid As I don’t want them to overlap until frozen As soon as I had my breakfast, I had to wash the dishes (I’m forcing myself, no one else) Even if I make lunch while I want to start on a clean slate Putting on my headphones to edit for a while Someone in the comments asked me what else I do except cook I have many interests like sewing, knitting, drawing and crocheting But lately, in my spare time, I edit my videos and it’s my favorite thing to do Do you like my new t-shirt?! It’s the one I was gifted for my birthday! What am I thinking and I froze in time? All good, keep moving So today I’m making homemade pesto with chicken and a burrata salad I heard that before using burrata, it’s best to leave it o
n the counter for 2 hours, so I’m leaving it now This will result in a creamy and runny burrata texture, I hope The pine nuts are slightly toasted I’ll set them aside to cool for now Mr P and I love eating chicken So today it will surely be a happy day let’s pretend these are even in thickness just try to do better this time, please ok it’s good, it’s good The fatty bits are reserved for the cats salt & black pepper & chicken spice mix (whichever you like) Sprinkling a thin coat of flour to make it extra crispy on the outside and doing the same on both sides Why the sound of chicken searing is so calming haha Flipping when some color is developed moving to a lined pan for a bit while I continue with the rest Boiling water to sterilise the cutting board before washing The smell of this right now is making me forget I ever ate breakfast haha Baking them in the oven for a while to make sure its cooked through wipe wipe Cooking the fatty bits for our cats I know it’s fine for them to eat this raw, but I want to take care of them I won’t let this burner rest today While the pasta cooks, let’s make some deliveries Customer no1 please enjoy your food (I let it cool before giving it to them) And for the lady, too and some pets too, I can’t argue with that Maybe she should enjoy it under the shadow Picking up the broom for the 10th time today because of the wind Washed my hands to handle the food Pasta and chicken are done The chicken is perfectly cooked and smells amazing wait for me here Wearing a hat to go out again I come here for some basil leaves harvesting Counting three nodes and sniping above the third one This will help the basil to keep growing Yesterday I went to the grocery store and tried to buy some basil Since I felt bad about cutting my own 🤧 But they had run out! ..and they even told me to just buy a plant to harvest 🫣 If they only knew haha Making a small batch of pesto for the first time 20g pine nuts, 35g fresh basil, 20 g parmesan, 60 ml olive oil and a garlic clove Scraping the sides and continuing until blended evenly Of course, I’m eyeing the parmesan and olive oil amount It’s hard for me to blindly follow orders This looks yummy to me Actually, when I started cooking, I wanted very specific steps but as soon as I got the hang of it I like to experiment according to how I like it It helps you to imagine how the result should be Stir-frying a garlic clove and two sun-dried tomatoes While these are cooking, I’ll start the salad too Mediterranean cuisine is so rich And it always highlights the use of tomatoes and herbs This is my second favorite salad after Greek salad, I think Dressing simply with salt and olive oil Then, burrata and a basil leaf to top it off In the garlic and sundried tomatoes, I’m adding the pasta Make sure the pan is cooled before adding the pesto sauce And of course some more parmesan cheese (it’s never enough!🙅‍♀️) I love trying new cuisines But since each country has other ingredients, it’s important to adjust as you see fit I never mind seeing Greek cuisine adjusted to another countrys flavors Sometimes I even get inspired myself haha I feel so hungry with all these aromas and the visuals aren’t helping either Even during editing, I suffer 😭 I just went to grab a quick snack to ease myself Ok I’m all set to continue haha Mr P says my homemade pesto is so much better than the store-bought Mr P opening the burrata with care two foodies laughing in happiness because of the food The burrata is so creamy, and this trick to leave it out of the fridge for two hours works so well! I feel like dancing with a dish this good The cherry tomatoes are so incredible this time of year The pesto is so fragrant and savory I feel this could be the taste of this year’s summer Another Day Waking up earlier than usual today We’ll be going for our first swim this summer My male cat hangs out in the back garden for a change We’re going today for our first swim I’ve worn long sleeves and long pants This is because I burn easily under the sun, even after wearing sunscreen hey Mr P wears a t-shirt and a hat🧢 Morning pets are the best kind, in my opinion How cute is this poor little thing I’m so excited to go swimming🌊 Getting fuel for our trip and saw that my shirt is torn- oops The barista lady made me some cute summer drawings too!! The weather is so inviting and lovely I feel the happiness lever rising We came to an organised beach🏖️ The first swim should always be the comfiest one too The smell and the sounds are the ones I’ve missed so much The salt water, combined with the sunscreen smell, unlocks so many happy memories The sea is so calm and clear today It is a bit cold for us, so we walk around first to convince ourselves It says it’s only 26 C? The sea is so cold so early in the morning! The sea is so clear and full of fish The sun, like diamonds shining on the surface This moment calms my soul so effortlessly I found these cute little shells Let’s put them back in the water where they belong Cherishing this moment of peace and calmness We have to leave as the sun is getting too strong around noon and we want to take it easy today The most difficult thing at sea is leaving Swimming makes you twice as hungry as usual Since we woke up early, my mind couldn’t think to pack a snack My only thought was ”sea” haha Using many quail eggs before they go bad As hungry as I feel, I still crave something refreshing Cottage cheese will give me what I need These eggs cook so fast because they are so small Of course, the slightly burned ones for me haha This is homemade apricot jam that my mother in law made yesterday night It looks and smells so good This is from organic apricots straight from a relative’s yard & pink pepper flakes on the eggs We need to replenish some water too, so a side of fruits is essential Today’s combo is blueberries and nectarines Still wearing our swimsuits and digging straight into eating We’re just so happy to eat, we keep laughing Someone would think we’re starving for days Even simple meals like this feel special on a summer day I hope more days like this come I want to make kale chips that I haven’t made before I think it’s going to be pretty easy I tear up the leaves into smaller pieces But in hindsight, I should’ve washed them whole Things get serious, and I need to roll up my sleeves It’s hard washing them one by one, so don’t repeat my mistakes wine vinegar I let them soak in vinegar for a while, and then I rinsed them, one by one Somehow using this salad spinner makes me dizzy 😵‍💫 But it works well so let me suffer Need two pans for a head of kale Removing as much water as possible with a paper towel This will help them crisp up Be careful, they won’t overlap with each other Dressing with olive oil, salt and garlic shriracha (everything very moderate amount) I found kale chips at the market last week and they were 3 euros for just a few of them😵‍💫 Mmm it smells amazing! Let’s see if they’re worth making at home Bake at 150°C with a fan for a few minutes sorry, let me help you see better They bake very quickly, so you need to be careful they won’t burn They seem perfectly crisp! The simple flavoring is very nice in these I can’t stop snacking haha They are very nice, but they are a bit thinner than the store-bought ones I think it’s because of the variety I bought Kale is considered a superfood as it is rich in vitamin K, vitamin C, and A And rich in antioxidants, so it feels so healthy to eat But as soon as I added them in an airtight container, they lost their crispiness 😖 This week we have two amazing guests!! My sister in law and baby niece My sister in law always recommends me the best recipes And they’re always your guys’ favorites So since her husband is on a trip and she’ll be staying here we had to prepare a little treat together I’m always anxious to cook with someone else but I feel very at ease now She is very exact one the measurements and I’m the opposite haha Baby niece makes sudden appearances to check up on us This dessert is a healthy version of chocolate salami The original one I’ve made before Slowly adding the milk to the melted chocolate We are even having fun incorporating the milk With my sister in law, we used to hang out together in a friend group in high school Even before me and mr P got together We have also been on vacation together So she feels like she is my sister, too After the back story, let me get back to the recipe steps haha In the chocolate and milk, we added date paste and the peanut butter We sample the leftover biscuits, of course Mr P heard this and came to collect his tax haha There, there, you deserve it after you babysat the little niece Best part: break the biscuit to add them inside I think this needs some finesse to break Oh you think? a person who thinks and then acts, and a person who first acts and then thinks haha The recipe called for strawberries, but they were out of season So we’re trying it with some cherries to see if it’s good having little samples along the way That tastes so good, so we’re adding them Cut them into small pieces I must say this looks delicious as is Chocolate goodness Baby and mr P came to observe Lining a pan with parchment paper 200ml regular milk
200g chocolate couverture
200g sugar-free biscuits OR 150g rolled oats
90g dried dates (pitted and blended) OR date paste
150g strawberries or other seasonal fruit, cut into small cubes
2 tbsp peanut butter My sister in law made a mess, but she has the guest card (no repercussions) This must look good as the baby lags went wild This dessert must stay in the freezer for 4 hours to set and it should be kept in the freezer too Why are you coming so close to my face?! The freezer is full, and I struggle to fit this in Yayyy I made it!! We also wanted to show you our flowery hair clips too!! We keep banging our heads and laugh haha Next Day We’ve been going to the beach every day for the last 4 days And we’re thoroughly enjoying this little baby with us Yesterday, the dessert wasn’t set until midnight So we’ll enjoy this today Unwrapping it feels like a present What better gift to give yourself than something yummy to eat Giving the ceremonial honour of cutting this to my sister in law And Oh My this looks so good! The cherry pieces are not evenly distributed
but still a great pop of color It’s my first time on the channel that I use cherries haha I think in the next video, I have to make a cherry special occasion This dessert tastes amazing and the cherry addition is lovely It actually disappeared so quickly haha Even baby niece, I think, approves of this! Another Day Today is Sunday and we’ll go out to eat My hat and sunglasses are essential Mr P is the driver and I just relax to enjoy the ride It’s 26 C but feels so hot outside The summer is definitely here The sea looks awesome, but we avoid it during weekends As it tends to be too crowded for us Even the traffic is insane today Walking with a happy heart to the Greek tavern And I love my new shoes and hat My in laws always order too many things (we eat them all haha) grilled and vinegary octopus as a starter We also got eggplant salad and I love it I’ve never tried making it, but it looks simple The table is getting fuller with feta cheese and fried calamari Fried calamari is one mr Ps and I favorite things We used to go out and get so many as a main dish A whole piece of feta going straight into my mouth Fried calamari is one mr Ps and I favorite things The star of the show arrived late We got freshly caught red mullet Summer is for relaxing and eating fish, am I right? The only downside of fish is that you feel hungry after a while Fried mullet is so well fried on the outside Even if fried fish isn’t the most healthy way to have them, it’s surely my favorite Drinking a soft drink on a hot day like this This is the view of the tavern, not bad at all 🙂‍↔️ ♥️ Taking my hat and we’re ready to go This summer already feels so special for some unexplained reason I hope my feeling turns out to be true ♥️ Coming home to a warm, welcoming Hello there, little one, you’re so cute!   1. What a fun video to start the summer! I assume quail eggs have a whole different taste than chicken eggs. I have never in my life seen quail eggs in a market here in California. I once had ostrich eggs, scrambled, while I was in Namibia. Funny, but if I really think about it I still can taste them. A whole different taste. Your beaches are beautiful and the water so clear. 🏖️ What fun with your sister in law and niece — it looked like Mr. P was having fun, too. 😹 The chocolate dessert looked amazing though definitely the kale chips were more healthy. 😏 I love your tradition of going out for a meal on Sunday.   3. You are so lucky to have some of the best vegetables and fruit in the world. Australia has a very large selection of fruit and veg but they all lack flavour and taste whereas Greece has the best. Loved Mr p and the baby he looked a natural Dad so relaxed.   7. Γειά σου Holy Cherry όμορφη και γλυκιά. Πολύ ωραίο το πρωϊνό που έφτιαξες όπως και το γευσάτο κοτόπουλο με τα μακαρόνια. Το δε pesto με τον βασιλικό από τον κήπο σου υπέροχο. Μου άρεσε ιδιαίτερα η σαλάτα με τα ντοματίνια και την burata! Το αποκορύφωμα όμως είναι το γλυκό με τη σοκολάτα και τα κεράσια. Και εδώ στην Κύπρο τώρα έχω αρχίσει τα πρώτα μου μπάνια για φέτος σε ακριβώς κρυστάλλινες παραλίες όπως τη δική σου.   8. Also meant to say that you can use chives to replace spring onions but just remember they milder in flavour so you may need a bit more. Try this Raw mushrooms sliced fairly thin add some vinegar and oil salt and pepper and one bunch of chives chopped if you can't get fresh dried will do. Leave it in the fridge for about an hour. One very tasty fast salad enjoy.

  15. Just a note, chicken shouldn't be cut on a wooden surface, the wood absorbs everything.. Even if you clean it it's not safe like a plastic surface 🙂
