High-Protein Crispy Rice Paper Spanakopita (Air Fryer)
Crispy outside • Creamy, cheesy, protein-packed inside
Ingredients (for 2 large rolls):
6 rice paper sheets (3 per roll)
1 egg, beaten (for dipping) (~50g)
150g cooked chicken breast, shredded or chopped
120g low-fat cottage cheese
50g shredded mozzarella (or light mozzarella)
45g spinach or finely diced onion + fresh parsley (as shown in video)
1–2 garlic cloves, minced (~3g)
Salt and pepper to taste
Optional add-ins:
1 tsp dried oregano (~1g)
Pinch of lemon zest (~1g)
🔪 Instructions:
Make the filling
In a bowl, combine:
120g cottage cheese
50g mozzarella
45g spinach or onion + parsley
Garlic, salt, pepper, and herbs to taste
Dip 3 rice paper sheets one by one into the beaten egg and layer them together
Repeat for the second roll
Fill & roll
Place ~185g of the filling per roll
Add 75g cooked chicken breast into each
Fold in the sides and roll tightly, just like in the video
Air fry
Lightly spray or brush the rolls with oil
Cook at 200°C (390–400°F) for 8–10 minutes, flipping halfway, until golden and crispy
