are you guys up for some Irish beef stew with Guinness beer oh yeah let’s do it mix a/4 cup of flour with salt and pepper in a bowl coat your stew beef I have 3 lbs of Chuck here then Brown the beef and batches in a large pot or Dutch oven with vegetable oil it’s best to do this in batches when the meat is all brown set it onto a plate for now add more oil if needed and cook down a small chopped onion in one stock of chopped celery takes about 5 minutes add garlic and 3 tablespoons tomato paste and cook for for a minute then add 1 cup red wine delicious Guinness beer yes the whole can 1 and 1/2 cups of beeck and a splash or two of worser sauce stir and scrape up any brown bits from the bottom of the pot add the meat and any accumulated juices to the pot along with fresh Rosemary and bay leaves bring to a boil then cover and simmer for 2 hours remove the lid and add one PB chopped potatoes two chopped carrots and one chopped parsnip simmer un covered for one more hour or until the vegetables are cooked through and the meat is fork tender you may need more time the meat will tell you when it’s done remove from heat you can serve the be stew right away but it’s best to refrigerate the pot for 24 hours the flavor gets even better the next day just reheat the pot and serve it up this is seriously comforting and delicious my friends come get the full recipe
