I’ve been settling into the groove of a new and much more demanding work schedule, and enjoying a lot of social dinners with family and friends the last two weeks, but I’m happy to be back to meal prepping. It’s had such a positive impact on my life, and the days I didn’t have lunch or dinner planned was a great reminder of that!
Sesame chicken: chicken, honey sesame sauce, broccoli (steamed, seasoned with soy sauce, sesame oil, crushed red pepper), rice, sesame seeds
Sandwiches: croissants, deli turkey, Muenster, mayo and lettuce to be added day-of eating; cucumber sticks and ranch dip
Pasta: cheese tortellini, pesto; bacon (three slices, chopped), tiny tomatoes, zucchini (all sautéed and seasoned with garlic, a little salt, pepper, and crushed red pepper)
No snack boxes this week bc we’re having a heatwave here in NC, and the only snacks I wanted were mango dole whip and coconut popsicles
