Covered a 2.5lb chuck roast with Meat Church Holy Cow, smoked to about 170 to get the bark set, foil boat with some butter and bone broth and let it ride until 210.
Sandwich was inspired by another r/smoking user (wish I could give credit but it was years ago so I don't remember who). Green chili cream cheese, crispy fried onions, Kinders Chipotle Pineapple BBQ Sauce. I ate 4 sandwiches in about 10 minutes and I have no regrets.

What Temp did you smoke at?
Looks fantastic. How long did the cook end up taking?
Oh critical step I forgot in the description- poured the drippings and fat left in the foil boat all over the bark before resting. Made for amazing bark texture.
Is that sauce good??
Is 210 not too hot? Or for chuck is that right?
You are missing one thing, a cup of au jus to dunk that sandwich in.
