Ingredients:
• Carrots
• Salt & pepper
• Oregano & basil (optional)
• Olive oil
• Ricotta cheese
• Lemon zest & juice
• Pistachios or pine nuts
• Fresh basil leaves
Instructions:
1. Prepare the Carrots:
• Peel and cut carrots lengthwise into 2 or 4 strips.
• Lay them on parchment paper, season with salt, pepper, oregano, and basil.
• Drizzle with olive oil and toss to coat evenly.
• Roast at 180°C for 30 minutes.
2. Make the Ricotta Bed:
• Season ricotta with salt, pepper, lemon zest, and 1/2-1 tablespoon of lemon juice.
• Add 1 tablespoon of olive oil and mix until smooth.
• Spoon the ricotta mixture onto a serving plate in a beautiful, even layer.
3. Assemble the Dish:
• Allow the roasted carrots to cool slightly, then arrange them artfully on the ricotta bed.
• Sprinkle with shelled pistachios or pine nuts.
• Garnish with fresh basil leaves.
