Trimmed beef cheeks seasoned with kosher salt, 16 mesh black pepper, onion and garlic powder. Seared over Kingsford blue and hickory chunks at 300 for 25-30 minutes a side. Tightly wrapped with foil with a cup of beef stock for 4 hours at 350.
