Lesbian Pride Pizzelle

PIZZELLE
225g AP flour
1/2 Tbsp baking powder
3 large eggs
150g sugar
88mL canola oil
1 Tbsp vanilla paste
1/4 tsp cinnamon

Sift flour and baking powder together. Set aside.

In a mixer fitted with a paddle attachment, beat eggs at med speed. While continuing to mix, slowly add sugar (making sure the last bit was incorporated fully before adding more). Continue to mix and slowly add canola oil, vanilla paste, and cinnamon.

Continue to mix, and slowly add flour mixture. Mix until combined and smooth.

Preheat the pizzelle iron. Transfer batter into a large piping bag and cut a hole in the tip. When the iron is preheated, pipe a dollop of dough into the center of each mold. Close and cook for 15-45 seconds (time varies based on iron). Remove the cookies using a wooden chopstick and place on a cooling rack.

Once your cookies have cooled, lay them on a cookie sheet and bake at 220F for 30 min. (This will ensure they remain crispy).
