if ever there’s been a fish that more hate crimes have been committed against it’s a salmon traditionally cooked with a skin on which is actually a delicious way to cook it salmon skin gets super crispy but I feel like too much emphasis goes into getting the skin crispy and not enough emphasis goes into how much heat has to travel through that salmon to get the skin crispy let the oil heat up slightly before you let your salmon onto there i always sear the fish on the side where the skins come off because it just looks so much better i first heard it with Gordon Ramsey where he was saying the rule of 9010 you want to be cooking your fish 90% on one side and 10 on the other when no one ever talked about resting your fish and that time is super important albeit half the time that a steak would take to rest an awesome roast already and that’s been about 2 and 1/2 to 3 minutes if you look at the way that the heat has dissipated through the fish so far you can see that it’s basically cooked almost a third of the way through turn it over now use our sort of chef’s instinct to see this line slowly slowly disappear it’s on 44 so that is perfect large flakes of translucent salmon [Music]

  2. At home, I have found that broiling works best. Same idea, really. Skin off. 90% of the heat comes from the oven direct, with 10% coming from the grill (and foil) it's sitting on. The crispiness of that top layer of meat is all you need. Cut up the skins for a salad.

  3. If you do cook with the skin on:
    1. Score the skin so it doesn't curl
    2. Use high heat so it doesn't get soggy
    3. Rest it SKIN SIDE UP so it doesn't get soggy.

  4. Overcooked salmon tastes like tinned salmon. My mum always overcooks it but I can't tell her because she can't handle any criticism of her cooking!😢

  5. I don't want raw salmon. The texture is horrible to the palate. If feels mushy. I personally like my salmon a little dry with soy sauce. 😊

  6. He didn't do anything that he said. He didn't cook it 90:10, he cooked it like 10:90 and the fish was absolutely raw on the inside, not medium, it was raw.

  7. A perfectly cooked salmon filet is wonderful, but it’s hard to ruin in my experience, I’ve made several filets that did not turn out how I intended and I still completely enjoyed them.

  8. I don’t like fish rare unless it’s sushi, but I have only been able to cook salmon perfectly to the way I like it one time. It was the best salmon I ever ate and I have never been able to replicate it.

  10. To his red light example, it’s true. They can’t prove you were driving so they can only give you a ticket, they can’t charge you or give you demerits.

  11. I grill salmon, always in one side only and slightly indirect heat, and it takes much longer than you think to get it properly cooked. I like it just moist in the middle. Glazed with some maple syrup.

  12. nothing wrong with eating medium rare salmon, i just prefer it fully cooked with a nice brown sear. i feel like this salmon would have to say on the menu “cooked medium” to not get sent back because most people would be surprised.

  14. In retail dining, you serve the salmon like that, it will be sent back. The half raw fish technique is always taught, but most diners wont eat it served that way. This is the reason restaurants are starting to ask how they want their fish cooked. More people want it cooked through than half cooked. This is the difference between culinary training and what diners want to eat.
