New to charcoal grilling and I’m trying to get the thin blue smoke everyone talks about. Is this too much? I keep reading that it should be wispy but mine feels more billowing.

Keep letting it go for a bit after it warms up. When you don’t really see the smoke is what you’re looking for.

Thin blue smoke is good, it’s the white plumes that can give you an acrid taste.
As for how much, really depends on the amount of wood you’ve put in.

I have an Akorn as well a KJ. Just letting you know this is the Kamado Joe sub and while most of the advice here will probably be fine just know that the Akorn cooks differently than a Kamado Joe.
The Akorns are massively more efficient and thus it is really hard to get thin blue smoke. There is less overall airflow.
Thus I recommend less wood chunks and closer to where you start the fire. Make sure the junks are buried below the charcoal as the charcoal helps filter the smoke.
Because of the nature of the grill you may have to embrace a little white smoke because the grill has a small window of blue smoke. Again less chunks and get them hot early.
Also As others have said your vents are too open for 350.

Smell it. Smoke is tricky stuff with lots of compounds that aren’t even visible. Your nose is better tool for judging smoke than your eyes. If it smells like something you would want to eat, it’s good smoke.

How aggressive is smoke leaving? Use a lazy smoke to smoke for extended cook time.

With that, I’d be happy putting the meat on if I was in a rush, if I wasn’t, I’d give it 10 more minutes then meat it up. This is very close to what I think is optimal.

If it is not a Joe a can’t answer this question!! no I’m joking if it’s too blue just wait a few. If it gets white, this seems right. Tf it turns black get rid of the oil and scale it back! I hope that helps

People on these chats groups can get pretty extreme at times. My advice, try it play with it and see what YOU and YOUR FAMILY prefer. Go with that much,y family knows when it’s “too Smokey” which is the white nasty stuff, other than that, they just like good hot meat
