Hesitant to post because this isn't carbonara, but here goes: Sardinian Ridged Pasta With Saffron and Pork Ragu – super delicious. The pasta (semolina + water) was easy to make and shape, and the ragu wasn't too fussy. And got lucky and found some Pecorino Sardo – super funky and delicious.
