



Trimmed beef cheeks, seasoned with kosher salt, 16 mesh black pepper, onion and garlic powder. Seared at 300 over Kingsford blue and hickory chunks for 25-30 minutes a side. Wrapped tight with foil with a cup of beef stock and braised in the oven at 350 for four hours. Weber 26” master touch.

Is the broth to keep the barbacoa hydrated? I’ve never used broth for barbacoa. Just double wrapped in foil with tons of pepper salt garlic and bay leaves cooked at 375 for a few hours. I make the foil packets with around 4lbs each.
