This may seem so silly to some people, but I literally despise cutting onions when i’m cooking. Instead, every few months I buy a bag of onions and dice all of them with my handy dandy vegetable chopper and put them in the freezer in bags of ≈1/2 onion each.

Tip: Double or triple bag them in a larger zip loc bag, otherwise your freezer may smell like onions lol!

I know this isn’t a meal prep but I don’t know anyone who does this so I wanted to share. No more wasted onions or tears every time you’re cooking!

    I do this—with swim goggles on because onions—and then caramelize half of them before I freeze them.

    This is one of the best things I’ve started doing. You never know when you need onions and I never feel like chopping them!

  4. Glad you’ve had good results. I’ve found that freezing onions – diced, chopped or sliced – is really only great for soups, stews, and stocks. The cells membranes break during freezing when the moisture expands. Makes em awful for caramelization/saute. Definitely nothing that calls for raw onion.

    I do this with mirepoix. I vacuum seal it, i recommend it!
