This may seem so silly to some people, but I literally despise cutting onions when i’m cooking. Instead, every few months I buy a bag of onions and dice all of them with my handy dandy vegetable chopper and put them in the freezer in bags of ≈1/2 onion each.
Tip: Double or triple bag them in a larger zip loc bag, otherwise your freezer may smell like onions lol!
I know this isn’t a meal prep but I don’t know anyone who does this so I wanted to share. No more wasted onions or tears every time you’re cooking!

I do this—with swim goggles on because onions—and then caramelize half of them before I freeze them.
I tripled bagged mine and they still smell. Oh well.
They don’t get soggy after thawing?
This is one of the best things I’ve started doing. You never know when you need onions and I never feel like chopping them!
Glad you’ve had good results. I’ve found that freezing onions – diced, chopped or sliced – is really only great for soups, stews, and stocks. The cells membranes break during freezing when the moisture expands. Makes em awful for caramelization/saute. Definitely nothing that calls for raw onion.
I do this with mirepoix. I vacuum seal it, i recommend it!
