Depends. If you’re a butcher and you get to charge people extra per pound for a bone-in ribeye that has extra bone, and that price makes people pay more for bone? It’s the best marketing concept to hit the industry, ever. If you’re just a person into great steak, then yeah, totally overrated. Just buy a high quality dry aged ribeye.

I think it is. It’s harder to cook because of the bone and I don’t like paying for the weight of the bone. I’ve had plenty of boneless ribeyes that have tasted as good or better than any bone in or tomahawk.

IMO a Tomahawk is overrated because you are paying for additional weight in bone for presentation. A standard bone in ribeye is plenty plus the extra bone length can make cooking it awkward in the pan. Still a great steak though but you can get the same flavor and texture with a standard bone in ribeye for cheaper.

It’s a lot like Plate ribs. Nice to cook for a small group. I like to smoke then sear. But not very economical. My dogs sure like it when I smoke a tomahawk.

It depends on how you rate it, I guess? I have it properly rated — I do it about once a year when I have guests over and want the show of it. But for regularly eating, it’s not any more special than a thick cut boneless ribeye.
And while steak people disagree with me, I am more a NY strip guy than a ribeye guy anyway.

Going after bone is pretty fun and delicious and different experience than any other steak. It’s in vogue so yea the price sucks but it’s pretty fun to eat.

If the bone were not frenched the resulting gnaw off the bone result could definitely be considered a meaningful advantage.
Of course, if it’s not frenched it’s not a tomahawk. At that point you’re paying only for appearance.

Yes….you could cover it in gold leaf after cooking it and sprinkle salt over it with an awkward pose where the salt is forced to bounce off your elbow before hitting the steak. All with a pretentious dumb look on your face and then charge your guests $1200 for the privilege of being set on fire while they watch you serve an overrated cut of meat that’s not worth the $18 a pound you paid for it.
TLDR; I wouldn’t waste my time

I think so. I cooked one once and it was good but definitely felt like I paid for the bone not the meat. Only advantage is there is some of the best bites of steak along a bone.

I love them. Typically you can’t get a bone-in ribeye this thick cut and typically if the butcher takes the time to French out the bone like that, you know it’s a good cut of meat. Yes, you pay for bone but I’d argue you won’t find those qualities in the same version of regular boneless ribeye. It’ll be thinner and typically not as good a cut.
To cook this, I rub it and smoke it from the fridge in my smoker side box at 165° with an extra smoke tube for two hours or until it hits about a 111° internal temp. Then I finish off with a direct sear on the open firebox. This is on a Pit Boss 820CS with the side box attachment. [There’s the one I cooked last week.
