    The beard. It is how they attach to rocks and substrate.

    Agree with above, just the beard. It’s a normal part of the mussel and can be cut off (although it’s harmless to eat). I didn’t know this until I started harvesting my own mussels from the rocky shore near me, but mussels are highly mobile creatures that are constantly competing for the best spot in the mussel beds. They produce these fibers (the beard) that stick to a nearby surface and are used to crawl and hoist the mussel into a better position for feeding.
