As the title says. I’m recovering from veganism and have been enjoying meat for the past few months. My favorite cut is NY strip but I got ribeye this time. I have been eating it less pink than pictured but after lurking in this sub for a little bit I found out that pink doesn’t mean raw. This is my first time trying reverse sear. First dry brine in salt for 12 hours, out of the fridge for 30min, reverse sear 30min at 250, cast iron and avocado oil 1ish min each side, baste with kerrygold garlic herb butter, rest for 5 min then cut and eat with half an avocado. It was very tender, I tried some of the fat and it was delicious too. Any advice on making it better is welcome!

That’s looks nice. How does the full avocado go with the steak? I never tried that.

Nice looking steak. If you don’t mind me asking How did your body and digestive system react when you first started eating meat again? Did you have to take it easy? Did you feel a big difference?

Good pairings with steak are roasted broccoli and cauliflower, sautéed mushrooms, and grilled onions. Try horseradish also, can be a really nice compliment to the red meat.

The avocado and hatch green chilis go better with chicken thighs in my opinion

Welcome to the club! I left veganism 10 years ago for a ny strip and fried chicken skin

12 hours is a loooooong brine. Was it salty? I usually go 4 hours tops.
