    Don’t be afraid to turn the heat up. It REALLY doesn’t matter if some of the onion on the bottom browns a little quick in the beginning, it’ll add to the flavor and color. Turn it up. keep an eye on it, then lower it little by little to match a nice medium low that it needs.

    Also note that each and every stovetop is different. Find the right range with your nose, eyes, and heart.

    Buy a laser thermometer and cook by temp, not by “low.”

    I put a lid on a pot and leave it slightly ajar to help speed up caramelisation. It still takes at least 4-6 hours. 🧅 😋 ❤️ 🧅

    Seriously that’s nuts for over 2 hrs. I was amazed it took over an hour to do mine the last time I made French onion soup but it started getting some colour about 30 mins in
