welcome back neighbor Today we’re making Moroccan carrot salad This is an interesting flavor combination to make a delicious vegetable side dish To begin you’ll want to rinse six carrots which we will grate into a large bowl We also need half an onion You can either chop this very finely or use the grater that you already had for the carrots and grate the onion into the bowl as well In a separate smaller bowl combine the juice of one lemon 3 tablespoons of oil 1 teaspoon of curry powder a half a teaspoon of salt 1/4 teaspoon of black pepper Mix this together and let it sit for 5 minutes so all of those flavors can combine in that oil Next you’ll pour the oil over the grated carrots and the onion Stir in 1/4 cup of golden raisins and mix this well to combine Let this sit in the refrigerator for 15 to 20 minutes and then enjoy
