I use Yellow Onions the most. I love them all. Red Onion has my favorite flavor, love the bite it has.

It’s all situational. Every onion has a purpose. You wouldn’t use a shallot in a gimlet, but the pearl shines there. You wouldn’t use pearl onions in Mongolian Beef, but white and green onions are perfect in it.

Shallots : versatile, any recipe that said for specific kind of onion can be replaced by shallots. Also crispy fried shallots (often seen in asian, especially southeast asian cooking) can’t be beaten.
Green onion : when people tell you that you need more greens, dump these thing on your food.

I buy shallots the most
I like the white one or the yellow one. The purple one is pretty for raw stuff, but messes up the color on cooked stuff.

I usually buy sweet onions but…if I’m cooking Mexican food, then white onions. Green onions for asian, red onions for salads and pizzas…
