First attempt at tri tip. It was a bit over done for my preference, yet still under cooked for my wife’s preference but she was happy with the end pieces. Will plan to pull it a bit sooner next time but curious what everyone likes to season theirs with? I went with a generic brand Santa Maria seasoning but would like to try a different seasoning next time.

    Great piece of meat there! I usually go Santa Maria. However I alternate between a simple homemade Santa Maria (black pepper, salt, garlic), Rosemary Salt and Black Pepper, and more recently Hardcore Carnivore Black!

    How you cook it ? I do lots tri tip from California and born and raise. Seasoning on tri tip keep it simple. Kosher Salt, fresh course ground black pepper, garlic powder , paprika. That my basic seasoning. Rosemary’s and oregano are optional add on.
    For me Santa Maria style pit using red oak.

    I cut mine into steaks and grilled yesterday. Tonight I took the left overs, shaved them thin, and made cheese steaks with peppers and onion. As long as you don’t over cook it, it’s a pretty versatile cut.

  5. I’m doing a tritip brisket style tomorrow. Dry brine and pepper rub. 250 to 165ish, wrap in tallow to 200ish. Can’t wait. Such a crazy versatile cut

    You must try it with chimmichurri next time. My absolute favorite meal 🙂
