i feel like savory croissants are one of the most underrated bakery options and I get it because when I go to a bakery I’m looking for like a pistachio custard or maybe even those fresh strawberry preserves piped into those flaky layers so when I finally decided that I needed to get back on my croissant journey I was like let’s switch things up and make an heirloom cherry tomato tart with an herby ricotta filling because I’m finally able to pick cherry tomatoes like daily for my garden and my tomato girl summer heart just can’t contain the happiness so the one thing I did differently from my other croissants was I used a cookie cutter to make the tart shape kind of like biscuit making before I let them rise a few hours and because we’re no waste girlies I sliced the scraps into strips to brush with an egg wash and garnish with sugar my nana does something similar with leftover pie crust and it’s just like such a yummy snack as you wait or like with coffee so yummy for the cherry tomatoes I just cook them in a little olive oil and salt for a few minutes before adding water to steam for 3 minutes the goal was not to cook them just to make them like tender to bring out their sweetness and then I layered the herby ricotta with the tomatoes and I guess I can officially say you will be seeing a lot of tomatoes from here on out
