Only took about 20 hours.

Brisket and Pork Butt cooked on offset smoker. SPG rub on brisket. Chile rub on pork. Used pecan wood. 11 hours on smoker. Foil boat after 8 hours. Finished in oven at 210. Total 16 hours cook time. Rested 6 hours. Homemade potato salad and coleslaw. Homemade Carolina style sauce for the pork. Homemade bourbon habanero sauce for the brisket. Martin potato roll and bread.

Nit Picks: brisket was fairly lean and didn't have much of fat cap. It was a packer from HEB. $4.49 lb. Ended up a little over cooked and a little dry but that wasn't surprising. The pulled pork is amazing if I say so myself.

Overall a satisfying 24 hours and lots of BBQ leftover to give away and feed on in the near future.

  1. Looks wonderful mate. I have a similar smoker to you and my next project is probably a brisket.. what would you do differently next time?
