Dry rub:
1/4 Monk fruit golden sweetener
2 tbls salt
1 tbls black pepper
1 tbls paprika
1 tsp chili powder
1/2 tsp Garlic, onion, cayenne pepper each

Sauce:
1 cup Stubbs sugar free
4 tbls butter
1/4 cup monk fruit sweetener
Hot sauce because I like a kick

Cube pork belly and toss with olive oil and dry rub. Put on smoker fat side up for 3 hours then transfer to disposable pan and add sauce. Cover with foil and cook for another 60-90 min. Remove cover and let sauce thicken for 16 min and remove from heat.

Served this to several people who couldn't tell it was 0 sugar. I know i didn't make that many changes to get this to be keto but probably the best keto meal I've made so far.
