  2. Pistachio Pesto Lasagna – Ingredients for 6 servings:
    For the pesto:
    * ¾ cup (100g) unsalted pistachios
    * 10 fresh basil leaves
    * ½ cup (50g) grated Parmesan
    * 2 tbsp (30ml) water
    * Enough extra virgin olive oil to blend
    For the béchamel:
    * 4 cups (1 liter) whole milk
    * ¾ cup (100g) all-purpose flour
    * Salt to taste
    * A pinch of nutmeg
    Other ingredients:
    * 1.1 lb (500g) fresh lasagna sheets
    * 3.5 oz (100g) speck (or prosciutto, diced)
    * 1 ball of mozzarella, torn
    * Grated Parmesan for the top
    * Chopped pistachios for garnish

  3. How to make it:
    1. Pistachio pesto: Blend pistachios, basil, Parmesan, water, and EVOO until creamy. Set aside.
    2. Béchamel: Heat milk with salt + nutmeg. In another pot, melt butter (or use oil), stir in flour, then slowly add the warm milk. Whisk until smooth and thick.
    3. Mix: Combine pesto and béchamel. Add chopped pistachios for texture.
    4. Speck: Pan-fry the speck until crispy (no oil needed).
    5. Assemble: In a baking dish, layer béchamel-pesto, lasagna sheets, speck, mozzarella, pistachio crumbs, and repeat. Top with béchamel, Parmesan, and extra pistachios.
    6. Bake: 350°F (180°C) for 25 minutes. Let it rest before slicing.
