I was proud of this USDA Prime New York strip. I think it came out pretty dang good. What do y'all think? Forgot to snap a photo before slicing it!
Pan seared, flipped frequently. No more than 1 minute per flip. 120F internal temp.
Side dish:
Mushrooms, spinach, garlic, white wine, butter, cream, black pepper. Cooked in the pan after the steak.

Gorgeous gorgeous gorgeous. Next time season it with only Brazilian see salt brined for about 1.5 hours the after cooked put some capers and mustard and you’ll have the most awesome thick ass carpaccio ever.
