



Picked up some nice USDA Prime NY strip steaks this weekend. Dry brined for five hours. Fired up with B&B lump charcoal and a couple of pieces of lump hickory for smoke. Started a reverse sear with the deflector plates, took them off to rest for 20 minutes when my Meater hit 118.
Removed the plates and got the temp as high as I could in 20 minutes. I saved some smaller bits of charcoal from my last cook and threw them on top after removing the plates. I may have overdone it though, I was unable to go much higher than 500 degrees. Might have smothered it a bit.
Was still able to get a decent sear and deliver some nice medium rare steaks to the table for a family dinner.
