Guess what – another bloody carbonara! (yes, I ken ye’re sick o’ it)

For this one, used golden egg yolks and a wee bit less cheese, for colour.
Got the pasta to perfect readiness with a mugful of pasta water and guanciale in a pan after boiling to hard al dente. Really helped during mixing the sauce.
